I find the all inclusive vacations to be boring. If you just want to drink and sit in one place why not stay in Miami?
I would like to find a traditional bed and breakfast to stay at. Where you can talk with a real host family and interact with other guests.

Oh that would be nice. My family used to stay at a lovely bed and breakfast in Palm Springs. Yes, I know that's not the Caribbean. It was a wonderful experience. I found a list of bed and breakfasts in the Caribbean. I hope you can find one that suits you.
